Chicken Risotto
Print RecipeIngredients
- 400g (about 14 oz) chicken breast or thigh meat, diced
- 300g (about 1 1/2 cups) Risotto rice
- 1 liter (about 4 cups) chicken broth
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 150ml White wine
- 100g (about 1 cup) Parmesan cheese, grated
- 50g (about 1/4 cup) butter
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh herbs such as parsley or thyme for garnish (optional)
- Vegetables like peas or mushrooms (optional, for added flavor and texture)
Instructions
- Heat olive oil in a large skillet or saucepan over medium heat. Add diced chicken pieces and cook until browned on all sides. Remove the chicken from the pan and set it aside.
- In the same skillet, add a bit more olive oil if needed, then sauté finely chopped onion until translucent. Add minced garlic and cook for another minute until fragrant.
- Stir in Risotto rice and cook for a few minutes until the grains are lightly toasted, stirring constantly to prevent sticking.
- If using, pour in a splash of white wine and stir until it’s absorbed by the rice.
- Begin adding chicken broth to the rice mixture, one ladleful at a time, stirring frequently and allowing the liquid to be absorbed before adding more. Continue this process until the rice is cooked through and has a creamy consistency. This usually takes about 18-20 minutes.
- About halfway through cooking the rice, return the cooked chicken pieces to the skillet to heat through.
- Once the rice is cooked to your desired consistency, stir in grated Parmesan cheese and butter until melted and well combined.
- Season with salt and pepper to taste, adjusting as needed.
- Serve the chicken risotto hot, garnished with fresh herbs like parsley or thyme if desired. Enjoy!
