- ¼ cup almond, chopped
- ¼ cup cashew, chopped
- 2 tablespoon pistachio, chopped
- 2 tablespoon walnuts, chopped
- 2 tablespoon sesame seeds
- 2 cup pitted dates, about 30, roughly chopped
- ½ tablespoon butter or ghee , (or coconut oil for vegan)
- ¼ cup raisins
- ½ teaspoon cardamom powder
Instructions
- Place the chopped nuts in a skillet and toast over medium heat for about 30 seconds until they are lightly golden.
- Then, add the sesame seeds and toast for a few more seconds. Transfer the toasted nuts to a bowl and keep aside.
- In the same skillet, melt butter and add the chopped dates. Cook over low heat for about 2 minutes until they soften, stirring constantly with a spatula.
- Then, incorporate the raisins, toasted nuts, and cardamom powder into the dates mixture, and continue cooking for an additional minute.
- Remove the pan from the heat.
- Allow the mixture to cool until it’s comfortable to touch. Then, if necessary, continue blending it by hand.
- Place the dates mixture onto cling wrap and shape it into a log. Store the log in the refrigerator and slice the dates as needed before serving.
